Quinoa Tabouli

Tabouli is my absolute favorite Lebanese dish!  Although I haven't perfected it to the way my grandmother made it,  here's my version with cucumbers, quinoa, & spinach for added health benefits:

Ingredients
 - 2 Bunches of parsley
 - 3 Roma tomatoes
 - 3 Scallions
 - 3 Persian cucumbers
 - 2 Romaine lettuce leaves
 - 1 Small bunch of fresh mint & baby spinach
 - 1/2 Cup of cooked & cooled quinoa

Dressing
 - Olive oil
 - Salt
 - Lemon

Finely chop all ingredients, mix together, & add the olive oil dressing.  Adjust the ingredients to your liking. I prefer LOTS of lemon juice.
